Ingredients:

Flavourless oil   for greasing the tray

Granulated sugar   500g

Cream of tartar   ½ tsp

Cornflour     120g

Rosewater   ½-1 tsp

Pink food colouring   ½ tsp

 

Method:

Step 1:

Oil a shallow square metal or silicone baking tray (about 18 x 18 cm). In a pan, combine the sugar, cream of tartar, and 500 ml of water. Heat gently, stirring until the sugar dissolves. Once dissolved, increase the heat and bring the mixture to a boil. Let it simmer for 10-15 minutes until it becomes slightly syrupy. If you have a sugar thermometer, the temperature should reach 115-118°C.

 

Step 2:

Stir the cornflour into 150 ml of water. Then, whisking constantly, pour it into the sugar syrup. Continue whisking until the mixture becomes smooth and thick. Once combined, switch to stirring with a spatula or spoon over medium heat. Stir continuously until the mixture thickens to the point where you can draw a clear line through it with the spoon, and it begins to pull away from the sides of the pan. The mixture will be very thick and may form large bubbles that burst as it cooks, so be cautious. Once the cornflour mixture is fully incorporated, cook for another 20 minutes or until the desired consistency is reached. To test, drop a small amount into very cold water; it should form a ball that can be gently pressed when cold and will feel slightly springy.

 

Step 3:

Stir in the rosewater or rose syrup, along with the food coloring if you're not using rose syrup. Pour the mixture into the prepared tray and level the top. Allow it to cool and set for at least 24 hours.

 

Step 4:

Sift together cornflour and icing sugar onto a board. Carefully turn the delight out of the tray. Dust it with more icing sugar and cornflour, then cut it into cubes using a sharp knife. Dust the pieces with additional icing sugar mixture and separate them so they can dry.

 

Storage:

Store your delight in the open air or in small cardboard boxes or bags for up to one week.
