20 soft dates (e.g., Mazafati or Barhi), pitted
4 cups milk (dairy or plant-based)
2 tbsp fresh cream (or coconut cream for a dairy-free option)
4 tbsp cornstarch
3 tbsp coconut sugar (or honey/maple syrup)
1 tsp ground cinnamon
1 tsp ground cardamom
1 tsp vanilla extract (optional)

Instructions
1. Blend the dates: In a food processor, blend the pitted dates with 1 cup of milk until smooth.
2. Prepare the base: In a saucepan, mix the remaining 3 cups of milk with cornstarch, cinnamon, cardamom, and coconut sugar. Stir well.
3. Cook the mixture: Place the saucepan over medium heat, stirring constantly until the mixture thickens and starts to simmer.
4. Incorporate the dates: Add the blended date mixture, stirring continuously to combine.
5. Add the cream & vanilla: Once thickened, turn off the heat and mix in the cream and vanilla extract.
6. Set & garnish: Pour the mixture into serving bowls, let it cool, then refrigerate for at least 2 hours. Garnish with nuts and extra dates before serving.
